Chili



I was so happy when it warmed up last week...but of course since it's February in Indiana, it cooled off again. I'm kind of glad it did though because it had been awhile since we had chili. So, a perfect opportunity to make it maybe one last time this season.

Chili
  • 2 pounds ground beef (or turkey), I used 1 pound of each
  • onion, diced
  • 30 oz can of diced tomatoes
  • 15-30 oz of tomato sauce
  • 1-2 cans of beans, rinsed (I used Northern and Garbanzo)
  • chili seasoning
  • 1 cup water
  1. Brown meat and onion. Drain. 
  2. Add all other ingredients. Stir until well mixed.
  3. Simmer over medium heat for 20 minutes.

Good Ol' Tacos

I love Mexican food! Jason and I are trying to eat less carbs so this was a pretty easy dinner.


Tacos
1 pound hamburger or turkey
taco shells
taco seasoning
cheese
lettuce
sour cream
salsa
black olives

  1. Brown your meat. Drain it. Put back in pan.
  2. Add 3/4 cup water and seasoning (or however much the seasoning packet says). Simmer until well combined.
  3. Put meat in shells (we used corn tortillas tonight for the first time. I liked them!). Top with your favorite toppings.
I almost always serve tacos with spanish rice and refried beans. Yummy!

Lime Chicken

So I pulled out some chicken and couldn't figure out what I wanted to make. So I improvised ;)

Lime Chicken
4 boneless skinless chicken breasts
garlic powder
onion powder
lime, sliced

  1. Heat oven to 450 degrees.
  2. Place chicken in dish. Sprinkle with both seasonings.
  3. Place sliced lime on top of chicken. I put two slices on each chicken.
  4. Bake for 25 minutes or until cooked through.
